A coworker of mine recently shared her recipe for sing laadvo with me - spicy balls of peanut butter traditionally served at breakfast in her home state of Gujarat in western India. I have since made 3 batches and sung their praises to family and friends. Don’t let the spice scare you off, it’s not overpowering. Two of these first thing in the morning and I feel like I’m ready to ditch the car and just run to work - plus they’re freaking delicious.

3 C. roasted, unsalted peanuts
3 T. ginger powder
2 t. cardamom powder
2 t. nutmeg powder
½ C. powdered sugar
2 T. coconut oil
1 t. black pepper

Prep time: 10 min
Yield: ~24 2” balls

-Grind the peanuts in a food processor until they are similar in consistency to wet sand. 
-Add the remaining ingredients and pulse to combine; there should still be small, noticeable peanut chunks. 
-Form into 2” balls and enjoy! These should keep for a week unrefrigerated and much longer in the fridge.
