While there are a growing number of plant-based meats that resemble ground beef and work perfectly for taco filling, there is still something to be said for the DIY approach. If you love Taco Tuesday (we sure do) and want to literally spice it up, give this quick and easy cauli taco filling a spin.

Spicy cauli taco filling from The Spoon + Shovel

4 C. cauliflower, chopped
3-4 T. hot sauce
1 T. olive oil
¼ t. smoked paprika
¼ t. salt
½ t. turmeric
½ t. cumin

Prep time: 10-15 min
Cook time: 45-60 min
Yield: ~1 ½ C., 4-5 servings

-Preheat the oven to 375. 
-Clean and chop the cauliflower into a large mixing bowl; the pieces should be about mouthful-sized, as they will cook down significantly. 
-Add the rest of the ingredients to the bowl and toss to cover evenly. 
-Scoop onto a lipped baking sheet or large casserole dish and bake for 45-60 min, flipping regularly. It’s ready to take out when the cauli pieces are tender and slightly dry. 
-Spoon into a serving bowl or straight into hardshell tortillas, topping with whatever fixings you like best. We are partial to black beans, Daiya shreds, lettuce and tomato.
